A little bit of Brisbane history meets a whole lotta glamour...

Passing by The Inchcolm by Ovolo, it’s clear that something pretty special lies inside… We’re talking 50 suites, a quirky vintage-style fit-out and, now, a stunning all-day bistro that’s inspired by the raucous past of the hotel!

The Inchcolm Bar, nestled in the hotel’s ground floor, pays homage to Marie Thomson, whose husband John built the hotel and who called the site home during the 1910s and ’20s (and was known to throw down a few martinis in her time…). 

With a menu and interior that could be straight out of those golden days of bistro dining and drinking, The Inchcolm Bar, open seven days from midday,  serves up a welcoming but indulgent menu featuring the likes of oysters and caviar, steak tartare, Moreton Bay bug spaghetti and classic steak frites (plus, of course, a mean cheeseburger for late-night in-room dining). 


Now… to THAT martini hour! Running daily from 5:30 pm, a menu of five libations is available for just $12, including the signature Inchcolm martini with Ketel One vodka, Sipsmith London Dry Gin, fennel-infused dry vermouth, orange bitters and olive brine. Even sweeter? Hotel guests who book directly receive a complimentary cocktail during martini hour!

In addition to the martini marvels, a selection of boutique bar classics is also on offer in the lush, antique surrounds of the bar, which provides plenty of cosy corners for late-night conversations, knockoffs before turning in to your suite for the evening, or a special occasion meal and drinks.
