The Darling new seasonal menu you need to try

Some might say beach trips, sun dresses and dripping ice cream cones are the best thing about spring and summer in Brisbane – we say they’re wrong. Because the best thing about every change of season is all the changing menus featuring fresh new seasonal produce – especially when we can tuck into them at glam spots like Paddington’s Darling & Co! Forget finding sand in every corner of our car and handbag – we’re spending this season perched in air conditioned comfort at Darling & Co, glass of frosé in hand. Yes, they do frosé – do you even need another reason to make it your second home for the spring and summer? How about being able to get that frosé with a lobster roll for just $16 on Sundays? But that’s not all that will make you want to stop by. darling-and-co-4Between pitchers of Paddington Pimm’s and Garden Sangria, you can start your new diet (don’t worry, there’s plenty of carbs involved in our version) in their restaurant nibbling crispy zucchini flowers with labneh, jalapeño and tuna tacos and creamy burrata with salsa verde and rosemary flatbread. As for those carbs, Moreton Bay bug linguine with chilli and basil and the asparagus risotto with goats curd should be more than enough to tempt you back every week for more, but if it’s something larger you’re after, there’s no going past the Bangalow pork belly with smoked mashed potato, sugarloaf and pickled pear. darling-and-co-2Of course, if the balmy spring weather has you feeling like something a little lighter, you can do your wining and dining in the bar, and turn the zucchini flowers or burrata into a fresh salad, or opt for the green bowl with soft eggs, haloumi, kale, avo, mushroom and wild rice. Or you know – split a chilli and prawn pizza and finish it off an espresso martini ice cream sandwich instead.
