The art deco inspired addition to the Ovolo Inchcolm is the talk of the town, and for good reason. With its 70s/80s vibes, share-plate focused menu and cosy lounge and bar lined with curiosities we can see ourselves setting up shop in Spring Hill. Bar office anyone?

The menu is vague in the best way, with flavours ranging from lamb, eel and desiree potato to drake, kohlrabi and umeboshi. What are you going to get? The jury is out, but we can confirm its impressive – even if you’re not entirely sure what you’re going to get. And vegetarians aren’t getting the short end of the carrot stick either with dishes including eggplant, cauliflower and Jerusalem artichoke ensuring everyone gets their greens.

Crack constantly under the pressure of choosing an entree? Leave your night in the capable hands of your hosts as they choose a menu based on your personal taste. Exclusivity never tasted so damn good.

If you’re time poor, or just not that hungry (what is WRONG with you?) perch up at the bar, listen to the carefully curated Spotify playlist and pretend you’re Don Draper with a cocktail – but without the sexist attitude. The lounge bar specialises in flavoured martinis including lemon, rosemary and coffee, matched with cheeky small bites.

Come for the cocktails, stay for the Bowie. Salon de Co has it going on.
