Queensland Sandwich Artist Reaps the Rewards

Imagine being awarded a trip to New York City and London for making one heck of a tasty sandwich.  This is a reality for owner of Brisbane’s Lady Marmalade Café and newly opened Shady Palms Café, Mal Gill, who was last week crowned Australia’s sandwich king. But don’t be fooled, being dubbed a sandwich artist at the Great Australian Sandwichship is no easy feat.  You can’t just rummage around your pantry for a jar of peanut butter. To be considered Australia’s sandwich artist of the year, you have to put your best culinary skills into action. Think: San Fran chicken triple decker with maple bacon butter, fried egg, gooey Egmont cheese, smoked salt and green goddess dressing, served with pretzels and Shady housemade pickles. Now that’s literally a mouthful! This winning combination saw the former My Kitchen Rules contestant take out the ‘Best Toasted Sandwich’ category at Sydney’s Fine Food show on September 10. The lunchtime hero also won ‘Best Wrap’ with his berbere spiced beef brisket wrap with beetroot hummus, methe, smashed sweet potato and bitter leaves. Cue stomach growl… Sandwich makers and café workers from across the nation compete to create the finest and most innovative sandwiches and wraps. A panel of internationally accredited judges critique each creation based on presentation, innovation, commercial viability and taste. The four super sandwich categories include:
  • Best wrap
  • Best toasted sandwich
  • Best lunch roll
  • Best creative sandwich
Workplace competition has taken on a whole new meaning with Mal’s co-worker, Beck Saul, awarded ‘Best Lunch Roll’ for her Portuguese chicken, chorizo, smashed peas, feta, mint, almonds and Harissa mayo creation. So there you have it; Brisbane is home to two of the best sandwich makers in Australia.  Now don’t you think it’s time you hustled down to Brisbane’s Lady Marmalade Café to have a taste for yourself?  You be the judge!
