Perfecting the Bellini

Is there anything better than a boozy brunch?

The Bellini. So simple, but so outrageously delicious. 


A sweet, refreshing sip alongside breaky, the Bellini is a favourite among us all – and we’re here to show you how to mix the perfect one.


It’s the biggest question surrounding Bellinis… Peach purée or peach nectar? We are firmly on the side of purée. It’s yummier, fresher, and far more traditional – but sometimes nectar (or peach juice) is all you can get your hands on, and that’s still tasty. If you’re shopping around, there are some great store-bought purées and Bellini mixes out there, or keep reading for our simple peach purée recipe.

Traditionally, white peaches are used in a Bellini. White peaches are in abundance in Italy, where the recipe originated, but yellow peaches are more often used down here in Aus. Peaking mid-summer, there is nothing better than a ripe yellow peach blitzed up to create a vibrant yellow Bellini!

To make a really simple peach purée, grab four ripe peaches, peel ‘em, slice ‘em in half, and remove the pits. Place the halved peaches in a blender and blitz until completely smooth. Chill in the refrigerator for at least 30 minutes before adding to prosecco.

Other purée recipes suggest adding a simple sugar syrup, but your peaches should be sweet enough on their own! We do recommend a nice squeeze of lemon if you’re so inclined.
