Start off your dining experience with a grilled wagyu and rosemary skewer, before tucking into salted kangaroo with blue congo, saltbush and macadamia. The pork collar is also a must, plated with white bean, sour plum and red cabbage. There’s also vegan appeal with a dedicated menu, but the mainstay is the lengthy (and mouth-watering) list of fun coastal-inspired cocktails.
