Did someone say CHEESE PASTA?

Yeah, you read that right. Pasta made of cheese is now a thing and we didn’t know we absolutely needed this until now. How is this miraculous foodie feat possible, you may ask? Well, it turns out the culinary wizard’s at Etta, a hip and happening joint on Lygon Street (why does Melbourne get everything good?), have combined ingenuity and magic to create a work of art you can eat. The pasta is made from mozzarella, sous vide, rolled into sheets and cut to mild ribbons and results in an amazing texture and bite. Depending on the season, the cheese can be combined with zucchini and squash, as well as kombu stock and dehydrated olive dust, and it’s as delicious as it sounds. So excuse us while we pack our bags and book flights, if you need us we’ll be in Melbourne eating this for breakfast, lunch and dinner. Words by Georgia Casey
