Gold Coast restaurant, Citrique , has once again exceeded our expectations of ocean-paddock-to-plate dining with its new five-course winter degustation. Boasting delicate seafood, winter warmers and perfectly paired wines, Citrique’s team of chefs have truly outdone themselves this season.

After taking in the lavish restaurant and hotel interiors of JW Marriott Gold Coast Resort & Spa, your dining experience will begin with succulent Bay bug dumplings, served in a smooth kaffir lime and chilli seafood bisque. Hot tip: don’t be afraid to soak up the soup-like sauce with a crusty bread roll! This course is paired with a soft riesling to ease you into the foodie journey ahead.

The second course features a buttery fillet of oven baked snow fish, with crispy skin that tastes exactly like swimming in the ocean – salty, refreshing, and so good for the soul. The snow fish comes alongside wood-fired cauliflower, adding a smoky touch to the fish, with smaller florets marinated in a zingy lemon verbena sauce. 

Next up, the menu heads to the paddock for slow braised pork belly with truffle pea puree and a sweet sauce. If you’re a lover of melt-in-your-mouth pork, this course is a stand-out. Accompanied with a glass of New Zealand pinot noir, you really can’t go wrong.

For the grand main course, indulge in roasted lamb cutlets cooked to absolute perfection, with a glass of full-bodied shiraz. Even with three sauces on the plate, each flavour complemented the others and brought a different flavour to the palate. A superb way to highlight local, earthy produce. Bravo! 

Finishing off with a bang – or should we say, pop – the JW raspberry root beer dessert was a dramatic ending to the degustation. Rhubarb is such an underrated ingredient for sweet desserts and it shone through amongst the white chocolate and raspberry cylinder. The sprinkled popping candy was an extra hidden surprise, and matched the sparkling rosé perfectly.

So, whether you’re after a full stay-cay at the luxurious JW Marriott Gold Coast Resort & Spa (which, you absolutely need to do!) or a boujee night out in Surfers Paradise, Citrique’s winter degustation couldn’t possibly disappoint.
