6 dishes you have to try at IndiMex

You’ve sampled Tex-Mex and drooled over Cali-Mex, now, feast your eyes and taste buds on Brisbane’s most original Mexican duo: IndiMex. This Stones Corner eatery dishes up funky Indian with a Mexican twist, and is one of few places  But if you’re forever wavering over whether to head out for guac and cheese loaded nachos or creamy butter chicken, then boy, is this the place for you. Head chef and owner, GJ Singh, worked in Mexican restaurants for decades, but wanted to share his Indian heritage with diners too. Eager to push culinary boundaries and try something new, he decided to break all the rules and combine the two cuisines together to give people an experience they’d never had before! If you’re overwhelmed by all the flavours and one-of-a-kind dishes on the menu, let us help you out and tell you what you should order – though you might have to go back more than once to try them all!
#1. Bombay Benedict Brekkie
If you’re a fan of eggs benny, mix things up a little and give this Indian inspired twist a go! Tender chicken tikka is piled on crispy buttered sourdough toast with poached eggs and curried hollandaise sauce for breakfast worth getting out of bed for.
#2. Bunny Chow
Don’t worry, bunny isn’t short for rabbit food – it’s a traditional South African Indian dish that involves everything you want in a lunchtime feed: carbs, meaty fillings, fresh salad and loads of flavour. A hollowed out focaccia bun is filled with the likes of chicken tikka masala or lamb madras and topped with salsa, greens and dips for a feast that will well and truly keep you going to dinner!
#3. IndiMex Burrito
You could get the IndiMex enchilada, quesadilla, chimichanga or nachos, of course, but it’s their cheese burrito that really gets us drooling. Served up with fillings of chicken, lamb, beef or veg, it’s melted to cheesy perfection and served with biryani rice, black lentil daal and a generous dollop of guacamole.
#4. Tostada Seafood Salad
Now before you go saying you never make friends with salad, let us ease your fears – this salad has more prawns, fish, squid, mussels, scallops and baby octopus than any salad you’ve ever seen! All served in a crispy (and edible) tortilla shell with guac and sour cream, we don’t even think it should be called a salad.
#5. Naan pizza
Just when you thought pizza couldn’t get any better, IndiMex goes and puts it on naan bread! Spicing up your lunchtime, these scrumptious pizzas have two versions: chicken tikka and bacon or spinach, ricotta and greens. We’ll have one of each, thanks.
#6. Moreton Bay Bugs
You’ll definitely want to be shellfish and keep this dish all to yourself – if you can keep your date’s hands off it! Enormous Moreton Bay bugs cooked in spicy Creole sauce are served up with fries, salad and biryani rice for a feast fit for a raja. There’s plenty more on the menu to eat your way through, including a whole line up of traditional curries and whole barramundi, and you can pair everything with a Mexican margarita or ice cold beer. You can even host a festive feast at IndiMex, with delicious set menus for Christmas parties and end-of year celebrations for both kids and adults throughout December!
