6 cocktails you have to try this weekend

  • Food & Booze
Whether you like them tall, short, fruity, sour, sweet or creamy, there’s nothing like a flirty cocktail to get your weekend libations started. But with so many cocktails to choose from on Friday’s Rooftop Bar’s lengthy menu of  tantalizing tipples, you might waste precious weekend socializing time trying to pick just one. Luckily, we’re here to be your cocktail connoisseur, so you can spend more time gazing out over Friday’s sparkling riverside views and hitting the dancefloor, and less time umming and ahhing over your order to the bartender, no matter what time of the weekend you head up to the rooftop bar for a drink.
#1. Negroni | Friday lunch
Take a leaf out the Italy’s book and turn your Friday lunch into a riposo, with a spirited concoction of gin, Campari, Martini Rosso and an orange garnish. Perfectly paired with a plate of bruschetta topped with tomato, onion, basil and parmesan salsa or a creamy mushroom risotto for the hungry types, it’s the perfect excuse to ditch the office entirely, and stay at Friday’s right up until close of business.
#2. Watermelon Sour | After work drinks
Whether you made it back to the office after lunch or not, 5pm is a cause to celebrate with a drink (or two, maybe even three). But if you’re not quite ready to throw inhibitions to the wind and order a Zombie, this blend of watermelon liqueur, lemon juice, sugar syrup and egg white with a cherry on top is a relaxing sip to ease you into the night – and pairs perfectly with some after work nibbles of fried chicken and chive gyozas and parmesan churros. fridays cocktail bar brisbane espresso martini
#3. Espresso Martini | Friday night tipples
You’ve dashed home to get dolled up for a Friday night out and are ready to get your moves on – but after a big day in the office, not even a vodka cranberry can get your toes tapping. The solution? Head to Fridays’ secret Glamour Bar for one of their infamous espresso martinis – you’ll be swaying to the beat in no time.
#4. Lemon Meringue | Girl’s night out
One for the sweet tooths out there, Fridays’ Lemon Meringue cocktail is better than any dessert. Ditch the final course of your dinner plans on Saturday night and head straight for the bar with your ladies instead, where this luscious blend of Galliano, Cointreau, pineapple juice and lemon will be waiting for you.
#5. Bloody Mary | Recovery breakfast
Friday’s knows that a little hair of the dog is the best cure for the aftermath of Saturday night, which is why they dish up a recovery breakfast every Sunday from 11am-2pm. For $20, you can tuck into a big plate of Turkish topped with pork ragout, mushrooms and fried eggs or haloumi, poached eggs and salsa verde, paired with a Bloody Mary or Espresso Martini. You could just have a coffee or juice, but why would you? BYO dark sunnies.
#6. Pimms Fruit Cup Pitcher | Sunday session
Nothing finishes off a weekend like a super chilled Sunday session, and Friday’s throws one of Brisbane’s best. Head along to their Sunday BBQ Beats, find a shady spot overlooking the river and share (or don’t share) a fruity jug of Pimm’s, cucumber, orange wheels, lemonade and dry ginger ale, paired with some nibbles from the scrumptious BBQ menu. You’ll want to pretend Monday is never coming – just don’t blame us when it does. Is it any wonder Friday’s has been Brisbane’s favourite rooftop bar for nearly 30 years with cocktails like these being shaken up at the bar? It can’t just be coincidence – and any day of the weekend is a good time to get reacquainted with their drinks with a view!
