3 chia seed pudding recipes to cheer up your mornings

Deliciously convenient as smoothies can be, you can only drink so many for breakfast before you start to feel like if you drink another, you’re going to turn into a puddle of almond milk and frozen berries yourself. If it’s time to bulk up your breakfast routine, why not try your hand at chia seed puddings? Once you’ve gotten over the fact that they kinda look like frogs eggs, you’ll be pleased to find that they’re easy to make, delicious to gulp down in a hurry and packed with all things you need of a morning, including protein, calcium, omega-3 and antioxidants! Chocolate Chia Seed Pudding | Minimalist Baker  Ingredients:
  • 1 1/2 cups almond milk
  • 1/3 cup chia seeds
  • 1/4 cup cacao or cocoa powder
  • 2-5 tbsp maple syrup if not blending (can sub 5-9 dates, pitted if blending)
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp sea salt
  • 1/2 tsp vanilla extract (optional)
Method:
  1. Add all ingredients except sweetener to a mixing bowl and whisk vigorously to combine. If not blending, sweeten to taste with maple syrup at this time. If blending, you can sweeten later with maple syrup or dates.
  2. Let rest in the fridge overnight or until it’s achieved a pudding-like consistency.
  3. If blending, add to a blender and blend until completely smooth and creamy, scraping down sides as needed. Sweeten to taste.
  4. Serve chilled with desired toppings, such as fruit, granola or coconut whipped cream.

  • ⅓ cup chia seeds
  • 400ml can coconut milk
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract
  • ⅓ cup unsweetened shredded coconut (plus a little to sprinkle on top)
  • ⅓ cup sliced almonds (plus a little to sprinkle on top)
  • 1 cup fresh cherries, halved or quartered
Method:
  1. Stir together chia seeds and coconut milk.
  2. Cover and refrigerate for 2-3 hours or overnight.
  3. Stir in remaining ingredients.

  • 1 tbsp chia seeds
  • 1/2 cup unsweetened almond milk
  • 1 tbsp maple or agave syrup
  • 1 tbsp peanut butter
  • ½ tbsp cacao or cocoa powder
  • 1 oz sliced bananas
  • 1/2 tbsp cacao nibs or chocolate chips
Method:
  1. In a container with a lid, combine the chia seeds, almond milk, syrup, cocoa powder and peanut butter.
  2. Stir or shake well to combine.
  3. Let pudding sit in the fridge for at least a couple of hours, if not overnight.
